The Inspiration: Our En Soleil Pinot Gris is grown by the Koch family in Wrattonbully, and the winemaking is all about preserving the exceptional fruit quality of this biodynamic single vineyard.
Wine Making: At the break of dawn, the grapes are carefully harvested, and their journey unfolds with genlte cold pressing. We then steer into a harmonious convergence of stainless-steel tanks, our concrete eggs and acacia barrels. To unveil the wine's captivating complexity and velvety texture, a meticulous process of lees stirring comes into place. Embracing the artistry of the concrete eggs, their ingenious shape keep sthe wine and lees in perpetual motion adding a exquisite touch and complexity.
Tasting Notes: This wine exhibits a straw yellow colour with blushed shades and a medium body. The nose reveals honey suckle and granny smith skins, complemented by the complex nose of almonds and hazelnuts. The palate delights in a pear pulp and green apple, culminating with a creamy finish; a result of the sur lie and batonnage techniques employed during winemaking.
Food Pairing: This wine is very versatile, great to be sipped by itself but great to be paired with cheese platters, pasta, fish dishes and our favourite pate, Crayfish.
Cellaring: Made in a drink-now style but will become more tertiary and complex over the next two years, if you can wait that long.
