The grapes were picked in two stages to get a mix of ripe tropical notes and herbaceous lift. The wine was then treated carefully to maintain and enhance its naturally lifted aromas. We aim to get the balance right to create a refreshing wine that tastes good with our local crayfish, or just by itself.
Following harvest, the first parcel grapes had a touch of skin contact, this is where some special aromatics happened. The grapes were then gently pressed, and the juice transferred to stainless tank for fermentation. The wine was inoculated with yeast and kept cool during the ferment and then blended and bottled early to capture the lovely aromatics and freshness. The second parcel underwent a similar treatment but instead of stainless we put these into our concrete eggs to build some more texture and complexity of flavours.
Tasting notes: Bright tropical fruit – think guava, apple and green mango. A rounded soft mouthfeel with a zesty acid drive.
